Prepare all the toppings and set aside.
Preheat oven to 225*C (425*F) or temperature recommended on frozen fries package. Cook fries in oven according to package instructions.
Make avocado-cilantro sauce by combining ingredients in a food processor or blender, and set aside.
In a large skillet over medium-high heat, add oil and crumble Tex-Mex sausage in the pan, breaking it up with a wooden spoon until browned and cooked through. Turn off heat and cover to keep warm.
When fries are done, remove them from the oven and set the oven to broil (top grill). Sprinkle both cheeses over the fries, return to oven and broil (watching carefully) for about 1 minute until cheese is melted. Remove from the oven.
Add the Tex Mex sausage to the cheese fries and load on all the toppings. Drizzle on the avacado cilantro sauce and serve.
