In a large bowl, combine arugula, half of the kalamata olives and tomatoes, and a drizzle of balsamic vinaigrette and black truffle oil. Add in torn basil leaves and sausage coins.
Add to plate, top with buffalo mozzarella, croutons, the rest of olives and tomatoes, and an extra drizzle of black truffle oil.
