Loaded Tex-Mex Fries

What You Need

  • 1 pkg (13.23 ounces / 375 g) Johnsonville Tex-Mex Style Pork Sausage Meat
  • 2 tbsp olive oil
  • 1 pkg frozen french fried potatoes
  • 3/4 cup sharp cheddar, shredded
  • 3/4 cup mozzarella, shredded
  • 1 can (14.5 oz) black beans, rinsed and drained
  • 1 red pepper, diced
  • 1/2 cup corn (frozen, fresh, defrosted or canned)
  • 4 green onions, chopped
  • 1 jalapeno pepper, thinly sliced
  • chopped cilantro, to garnish
  • 1 ripe avocado, peeled and pitted
  • 1/2 cup cilantro
  • 1/2 cup sour cream
  • 2 tsp lime juice, freshly squeezed
  • 1/2 tsp salt
  • 1 clove garlic


  1. Prepare all the toppings and set aside.

  2. Preheat oven to 225*C (425*F) or temperature recommended on frozen fries package. Cook fries in oven according to package instructions.

  3. Make avocado-cilantro sauce by combining ingredients in a food processor or blender, and set aside.

  4. In a large skillet over medium-high heat, add oil and crumble Tex-Mex sausage in the pan, breaking it up with a wooden spoon until browned and cooked through. Turn off heat and cover to keep warm.

  5. When fries are done, remove them from the oven and set the oven to broil (top grill). Sprinkle both cheeses over the fries, return to oven and broil (watching carefully) for about 1 minute until cheese is melted. Remove from the oven.

  6. Add the Tex Mex sausage to the cheese fries and load on all the toppings. Drizzle on the avacado cilantro sauce and serve.
