Caribbean-Inspired Sausage Curry

What You Need

  • 1 pkg Johnsonville┬« Salt & Pepper Sausage Meat
  • 1 1/2 tbsp curry powder, preferred type
  • 1/2 tbsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp allspice
  • 3 stalks green onion, chopped fine
  • 1 onion, chopped fine
  • 3 cups potatoes, chopped in 1" cubes
  • 1 roma tomato, diced
  • 2 tbsps cooking oil (use preferred type)
  • 1 cup chicken stock
  • 1 cup coconut milk
  • 1 bay leaf
  • 1/2 lime, wedged


  1. Combine curry powder, garlic powder, thyme, salt and allspice to make spice mix.

  2. In a dutch oven or large pot, add oil and saute sausage meat for approximately 3-5 minutes. Add spice mix and combine with meat until evenly coated.

  3. Add green onions, onions, tomatoes and potatoes and cook for another 3-5 minutes. For a thicker curry, add approximately 1 tablespoon of flour.

  4. Add chicken stock, coconut milk and the bay leaf. Bring to a boil and cover. Let simmer on low heat for approximately 15-20 minutes, until potatoes are tender.

  5. Serve over rice and garnish with lime wedges and additional chopped green onions.
