Tomato and Sausage Casserole

Serve up this delicious dish for your next Sunday dinner with the family. Our Johnsonville Mild Italian Sausages are cooked up with classic Italian flavours like onions, garlic and tomatoes in a must-have casserole. It's perfect for a casual dinner or 'feeds a crowd' recipe!

What You Need

  • 1 package Johnsonville Mild Italian Sausages
  • 1 tsp olive oil
  • 1 yellow onion, chopped fine
  • 2 garlic cloves, crushed or minced
  • 1 celery stick, chopped fine
  • 2 peppers, yellow and/or red
  • 1/2 tsp ground cumin
  • 1/2 tsp chili flakes
  • 2 cans (approximately 400g each), diced tomatoes
  • 1 can (approximately 400g), white kidney beans, drained
  • 2 cups spinach
  • 3 tbsps breadcrumbs


  1. Heat oil in medium casserole dish or pan and add onion, cooking for 5-6 minutes until soft and translucent. Add garlic, celery and peppers. Cook for 5-8 minutes stirring well.

  2. Increase heat to high and add sausages to dish. Cook for approximately 5-7 minutes and flip sausages. Cook for additional 5 minutes before reducing heat to medium. Add spices and mix well. Add in tomatoes and let mixture come to a simmer (approximately 8-10 minutes).

  3. Once simmering, cover dish with lid or aluminum foil. Let mixture continue to simmer for 35-50 minutes, stirring occasionally. 

  4. Turn heat back up to high and add beans and spinach. Cook unconvered for 5-6 minutes, or until warm throughout. Sprinkle breadcrumbs on top and serve. Optional: after adding breadcrumbs, broil in oven on the lower rack for 2-3 minutes before serving.
