Breakfast Sausage Egg Boats

What You Need

  • 1 package Johnsonville Original Recipe Breakfast Sausage
  • 1 baguette
  • 5 eggs, large
  • 1/3 cup heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup green onion, chopped fine
  • 1/2 cup fresh spinach, chopped rough
  • 1/2 cup red peppers, chopped roughly


  1. Chill breakfast sausage in freezer for 10-15 minutes. Once firm, remove from freezer and packaging. Cut into 1/2" coins.

  2. Preheat oven to 350F. Cook sausage coins according to package directions.

  3. In a bowl, combine sausage, eggs, cream, cheese, onions, spinach and red peppers.

  4. Cut a long rectangle out of the baguette and partially unstuff to form the 'boat'.

  5. Pour the egg mixture into the hollowed out baguette.

  6. Bake for 25 minutes. Cut into slices of desired size and serve while warm.
