Sweet Potato and Sausage Soup

What You Need

  • 1 pkg JOHNSONVILLE Hot Italian Sausage Meat
  • 1 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 large yellow onion, diced
  • 2 sweet potatoes, peeled and diced
  • 4 cups chicken broth
  • 3/4 cup small pasta shells
  • 4 cups mixed greens (kale, swiss chard), roughly chopped
  • salt and pepper to taste
  • Parmesan cheese, grated, for garnish

Preparation

  1. Heat oil over medium-high heat in large pot. Add garlic and onion, and cook for approximately 5-6 minutes (or until onion is translucent). Season with salt and pepper.

  2. Add sausage meat and cook for approximately 5-6 minutes or until meat is brown, breaking up meat while cooking.

  3. Add sweet potatoes, broth, 2 cups of water and bring to boil. Add pasta and cook with 2-3 minutes taken off package timing instructions.

  4. Reduce heat to a simmer and add greens. Cook for approximately 4-5 minutes or until pasta is tender and greens are wilted. Serve with Parmesan cheese as garnish.
