Pho-Inspired Pork and Noodle Soup

What You Need

  • 1 pkg Johnsonville Ginger Soy Pure Pork Sausage Meat, formed in 12 small meatballs
  • 1 cup Dry rice noodles (per person)
  • 4 cups (Vietnamese) Pho broth
  • 6 green onions, chopped
  • 1 bunch fresh bean sprouts
  • 1 lime, cut into wedges
  • 1 jalapeno pepper, thinly sliced
  • 1 carrot, peeled and thinly sliced
  • 1 bunch fresh sprigs of thai basil, regular basil or cilantro
  • salt and pepper, to taste

Preparation

  1. Arrange the green onions, sprouts, jalapeno pepper, carrot and herbs on a small serving platter.

  2. Prepare the rice noodles according to package directions and roll the Ginger Soy sausage meat into 12 meatballs.

  3. Cook the sausage meatballs in a skillet over medium heat for 5-6 minutes until cooked through. Cover and keep warm.

  4. Heat the Pho broth in a pot on medium-low heat. Cover the broth and bring to a gentle simmer.

  5. Drain the rice noodles and divide them into individual serving bowls, top with 3 meatballs per bowl. Ladle about 1 cup of simmering hot broth over the noodles.

  6. Serve platter of fresh ingredients alongside and everyone can add to taste.
