Italian Sausage Soup with Tortellini & Kale

What You Need

  • 1 pkg JOHNSONVILLE Mild Italian Sausages, decased
  • 1 tbsp cooking oil
  • 1/2 onion, chopped
  • 2 carrots, chopped
  • 1 tsp Italian seasoning
  • 2 cups diced tomatoes (any type or mix with traditional Italian flavours works)
  • 3 cups chicken stock
  • 2 leaves of kale, finely chopped
  • 2 cups cannellini or white beans, drained and rinsed
  • 2 oz Parmesan cheese, grated
  • 1/2 tsp fresh lemon juice (or to taste)
  • 8 oz cheese tortellini

Preparation

  1. Cook pasta following package instructions.

  2. Using a large sauce pan or Dutch oven, saute sausage in oil for approximately 2-3 minutes, breaking sausage apart. Add onions, carrots and Italian seasoning. Saute until for another 2-3 minutes or until onions soften.

  3. Add tomatoes (and liquid), stock, kale. Bring to simmer and then reduce heat. Let sit on low simmer for approximately 5-6 minutes. While soup sits, rinse and drain beans, and grate Parmesan cheese.

  4. Add beans to soup and simmer until beans are heated through. Remove soup from heat and add lemon juice. Add additional salt to taste.

  5. Divide tortellini into bowls and ladle soup over pasta. Garnish with Parmesan cheese.
